Many of these operations source grains or roughages from hundreds of miles away, sometimes even across state lines, to feed their cattle.
However, when our cattle at Crossing Rivers Farms reach the processor and become products available in big box stores, consumers might assume they are the same as the cuts we offer. While the cuts may look similar, the story behind our cattle and the feed they consume is what truly sets us apart. You can sit on the top rail of our feed pens and gaze out at the very fields where our feed is grown. We source our cattle as locally as possible, ensuring a connection to our land and community.
That top rail is more than just a fence; it’s a place where I sit with my sons, discussing our cattle, the process of grinding and mixing feed, and how this operation will one day belong to them. From that vantage point, we watch our cattle graze and enjoy local grains, all while planning our next steps to produce the highest quality, locally sourced protein.
It was from this very rail that I decided to launch our Top Rail Premium Beef Share program. Our cattle are typically on feed for 90 to 120 days, a sufficient timeframe to achieve the ideal intramuscular fat (marbling) and coverage we desire. We've seen outstanding results and remain committed to providing our customers with a high-quality local product. Yet, we wanted to offer something even more special for those seeking an elevated dining experience.
Top Rail Premium Beef Shares represent our finest cattle, raised on locally sourced feeds for a minimum of 270 days. While the difference in feeding duration might seem subtle, it’s akin to a single-barrel whiskey that ages a little longer: more time and care lead to a truly exceptional product. As the days increase, so does the marbling in premium cuts like ribeyes, New York strips, and filet mignons, enhancing both flavor and quality.
